Cloudy, unfiltered appearance with a deep golden color and coppery hues. Oxidative nose with hints of compost and apple puree, white cherries, dried yellow flowers and spices, like pink pepper. Aromas of flor and yeast result in its complexity. Full bodied, with an oxidative character of dried herbs and nuts, with spiky but medium acidity and mineral elements. Medium length aftertaste with hints of apple, spices, herbs and mature stone fruits.

Theodoros Tsikrikonis holds the distinction of producing the first single-varietal bottling from this grape, sourced from a vineyard over 60 years old, with a yield of 500 kg/acre. After the grapes are crushed the fermentation is conducted with the skins inside a terracotta amphora of 500L, in the style of ancient Greeks, for 6 weeks, where the extraction of the phenolics and the aromas of the gentle Rozaki variety is possible. 784 bottles produced.
