Made from 100% Agave americana (Andean sub-variety) harvested in Cayambe, Ecuador. CHAWAR Blanco is produced from the raw sap (chawarmishki in Quechua meaning raw and sweet) of Andean agave once it reaches 12 years of age. The agave sap is fermented naturally with wild yeast and double distilled. It can be grassy, floral, slight creamy and sweet. CHAWAR Background: For thousands of years, indigenous people from the highlands of Ecuador have harvested the sweet sap of the Agave. CHAWAR works Ecuador's first all-women’s indigenous co-op of agave harvesters who maintain their ancestral tradition by harvesting agaves on their communal land in the rich volcanic soils at the base of the Cayambe volcano.
