100% Chardonnay

Chablis, Burgundy, France

Vaillons is from four parcels (Minot, Epinottes, Séchet, and Chatain) on southeast exposure.  Maybe the most exotic, fruity of all the crus. Can age up to 10 years. Vinification is done in stainless steel, with about 6 months in older barriques for elevage. All the wines are fermented naturally and minimally sulfured at bottling. Loads of citrus and ripe white fruit layered over a characteristic minerality of oyster shell and slate.

5th generation Lilian Duplessis has gained a reputation for his “immortal”, age‐worthy wines and unparalleled store of older vintages. For those who love the intense minerality and glacially slow development of great Chablis, these are wines of reference. The 10 hectare property is organic Ecocert certified with mainly 50‐year‐old vines. Soils are classic Kimmeridgian with some marne and clay. Lilian makes some of the purest, most terroir-driven wines in the region.
