Skin contact wine aged in fiberglass. Jo Jefferies crafts this cuvee from old vines planted on volcanic soils and gravel and basalt terrains. The unique soil composition and Mediterranean climate contribute to the wine's distinctive character. The grapes undergo whole-bunch fermentation in the cellar with native yeasts, followed by aging on fine lees for eight months. Bottling is done without fining or filtration. NO ADDED SULFUR, VEGAN.
