Vineyard: Folts Farm - Finger Lakes. Bone dry with fine bubbles. Floral aromatics, bright fruit character - lychee, apricot, and peach. 

Two weeks skin fermentation, followed by another 2 weeks aging in stainless. Bottle conditioned second fermentation petillant natural. Unfined, unfiltered. 30 ppm sulfur at bottling. VEGAN. 80 cases produced. 

Brett Volker is Field Supply Wines, based in the upper Hudson Valley. While newly-planted vines mature on his home vineyard, he is working with sustainable and organic New York farmers to source high-quality grapes. Brett is originally from Australia, but moved to New York for work in the music industry. Field supply believes that wine lives at the intersection of art, agriculture, and design; a living experiment in how creativity can root itself in soil. All wines are fermented with native yeasts, minimal intervention and the only additives are small amounts of sulfur, when necessary.
