Yields are kept low. Harvested by hand, grapes placed in small crates to protect the fruit, followed by a gentle pneumatic pressing with light settling. Vinification and aging take place in stainless steel tanks (2/3) and amphorae (1/3), using only the naturally occurring yeasts. Aging takes place on the lees for approximately 12 months, then bottling.
A soft nose of white flowers, blossom, and citrus fruit, with structure on the palate, playful acidity, layering, and a deep finish. Exciting and energetic in a glass.
