Pinot Grigio is incorrectly called a white grape, but its name itself makes it clear that it is not a white grape variety. The color of its ripe grapes is a more or less deep pink. It produces copper-colored wines even when vinified as a white wine, while when vinified in contact with the skins, it takes on a pinkish hue, very close to bird's eye pink with onion skin highlights. Copper-colored Pinot Grigio boasts a deep-rooted tradition, known since the times of the Most Serene Republic of Venice, which used the term "Ramato" in sales contracts to indicate the name of Pinot Grigio wine. In recent years, we have witnessed a gradual disappearance of this more classic (copper-colored) interpretation in favor of the more "modern and technological" white winemaking method, in which the slight presence of color is removed through the decolorizing action of oenological charcoal. Just looking at a bunch of this vine is enough to understand that the grape does not deserve to be deprived of its natural “color” and with it part of its varietal profile.

The biodynamic project Lunaria Ancestrale thrives off the harmony of nature, land, and men. Catalysts in this circular economic process are sheep. During grazing, sheep naturally fertilize the soil of the vineyard improving soil fertility, nutrient absorption, and resistance to pathogens. In spring (mid-April to mid-May), when the heat begins to oppress the sheep, it becomes necessary to lighten their fleece, both for hygiene and welfare reasons. Before shearing, in the past, sheep were literally "thrown-jumped" into the water to wash dirt and grease off their wool. The sheep had to wade across the river to reach the opposite bank. This was the method used to obtain JUMPED wool. The jumped wool, when weighed, yielded 20% more. The sheared fleece is then spun into wool to be tied on the neck of the Ancestrale bottles.
