Hand harvest, de-stemmed, short, one hour maceration in the press, natural fermentation in stainless steel, about 6 months on lees with weekly battonage for texture, no MLF to accentuate freshness, minimal SO2 added at the end of fermentation and before bottling, lightly fined and filtered.
