100% Chardonnay
Jura, France
From 40 year-old vines planted on Jurassic-era limestone scree. The juice underwent fermentation and aging in wooden barrels for 12 months. Bottled in early September 2020 with some must from the 2020 harvest. Second fermentation, prise de mousse, with indigenous yeasts. Bottle aging on lees for almost three years. Disgorged in August with no dosage. ‘Brut’ sweetness with 10 g/L of residual sugar. VEGAN, NO ADDED SULFUR.
