Taken from the single vineyard Les Hautes Mottes, vines planted between 1950-1980; they sit on light chalky soils in Le Mesnil. This is the first release of ‘Dorien’ and is a single vintage of 2014; future bottlings will be from the perpetual solera started in that year. Hand-harvested, fermentation and ageing is ⅓ in used barrels, ⅔ in stainless steel tanks. Malolactic fermentation is neither encouraged or blocked—it generally occurs in the barrels but not the tanks. Dosage 1g/L. Bottling in June; disgorged July 2020. Annual production: 650 cases.
