Matchbook started with 1000 lbs of peaches, 30 lbs of peach leaves, and fresh elderflowers from their beloved local orchard and farm, Briermere, in Riverhead New York. Peaches were covered in water and boiled to yield a sweet, bright and incredibly aromatic peach juice. Fermented to an off-dry peach wine before fortifying it with house-made peach leaf and fresh elderflower distillates. Botanicals of quassia, rose petal, pink peppercorn create contrast and anchor the flavors.
