Cantina Elisabetta Dalzocchio - Vigneti delle Dolomiti
100% Pinot Nior
The Dalzocchio farm is located on the splendid hills of Rovereto, in Trentino. The family of farmers has always been Riccardo, father of Elisabetta, who at the end of the 70s, in 1979 to be exact, bought two hectares of vineyards, immersed in as many hectares of woods, planted with Pinot Noir grapes, which initially Riccardo sold to a sparkling wine company in Trento.
The first label was born in 1995, and at the end of the 90s he took over the business of Elisabetta family, who abandoned his career as a business consultant, to devote himself completely to his true love: Pinot Noir. Since 2005, Elisabetta has been dealing personally of the harvests and vinifications. The vineyards of the winery are immersed in a fascinating natural context, on one side surrounded by mountains and on the other influenced by the breeze coming from Lake Garda.
The parcels are between 10 and 32 years of age, and with the utmost respect for what is the balance of the environment, nature and ecosystem, they are conducted with the criteria of organic agriculture since 2001 and also follow the biodynamic philosophy: the yields low - about 40-50 quintals per hectare - guarantee the high quality of this magnificent Pinot Noir. The harvest takes place strictly by hand and the bunches are scrupulously selected, one by one, starting from a raw material of the highest quality. In the cellar, all production phases are respectful of the main objective, aimed at enhancing and enhancing all that the season and the territory have been able to express in the fruit. Fermentation, carried out in oak vats, takes place by indigenous yeasts only, and then the wine is left to mature in barrique for 18 months. The sulfur content used is minimal.
