SELVA VINS, Premsal 2019
In 2015, after 20 years working as a professional viticulturist on Mallorca, Carlos Rodríguez Furthmann began his own project focusing on native varieties and minimal intervention. Located in the tiny municipality of Selva in north-central Mallorca, Carlos farms under 1 hectare organically from clay and limestone soil, while purchasing a small amount of other grapes from local organic/dry-farmed growers. Prensal, an indigenous grape from the Balearic Islands (Mallorca, Ibiza, Menorca, etc.), known for fruity flavors and balanced acidity. Typically used for blending; Carlos set out to let the grape shine on its own. Fermented in steel and clay amfora, partial lees aging, minimal sulfur at bottling.
